Dressed to impress
Ingredients: 1 Tbs fresh parsley, 1/4 cup freshly squeezed orange juice, 1/4 cup olive oil, 1 Tbs honey, 2 Tbs white wine vinegar, 1/2 tsp grated orange peel, 1 tsp salt and 1/8 tsp cayenne pepper. Preparation: Mix all the ingredients together and pulse in the blender, refrigerate and shake before serving. This goes wonderfully with a fresh chicken salad.
Mint balsamic dressing
Ingredients: 3 Tbs balsamic vinegar, juice of 1/2 lemon, 5 Tbs olive oil, 2 Tbs fresh mint leaves and salt and pepper to taste.
Preparation: Add all the ingredients to a blender and pulse until blended. It will emulsify and get thicker once it is ready. Use one or two tablespoons a serving of your chosen salad. Scrumptious with a strawberry, feta and watermelon salad.
Minted mayonnaise dressing
Ingredients: 300ml mayonnaise, 2 Tbs Dijon mustard, 2 Tbs freshly chopped mint, juice of 1/2 lemon, 2 Tbs water and salt and pepper to taste. Preparation: Mix all the ingredients together and toss. Drizzle over a yummy potato salad.
Zingy fat-free dressing
Ingredients: 500g fat-free natural yoghurt, 2 Tbs Dijon mustard, a small bunch of coriander, 2 Tbs white wine vinegar, 1 clove of garlic peeled, 1/2 fresh red chilli, juice of 1/2 lemon and salt and pepper to taste. Preparation: Place all ingredients in a blender and pulse until blended … brilliant with a garden salad.
Coconut lime and coriander dressing
Ingredients: 1 cup fresh coriander, 3 Tbs lime juice, grated zest of 1 lime, 3 Tbs white wine vinegar, 1 cup coconut milk, 1 Tbs sugar and salt to taste. Preparation: Mix all the ingredients together and toss with a salad, vegetables or noodles (preferably rice).
